The caffeine in the coffee is removed using sugar cane, which is already a strong resource in Colombia and therefore practical to use both economically and in connection with the environment. There is between 0.01% and 0.02% caffeine left in the bean after the process.

ASOANEI (ASOCIACION DE PRODUCTORES AGROECOLOGICOS INDIGENAS Y CAMPESINOS DE LA SIERRA NEVADA DE SANTA MARTA Y SERRANIA DEL PERIJA) was founded in 1995 by an indigenous woman from the Arhuaco culture in Columbia, Aurora Maria Izquierdo, with the aim of promote the culture of the indigenous people through the production of coffee. ASOANEI has been producing organic coffee for over 25 years and has brought together more than 600 producing families who come from 4 different community groups of the indigenous people of the Sierra Nevada region. They all want to maintain and preserve their cultural heritage.
70% of the members are women. In the Arhuaco culture, they symbolize nature and fertility. A program has been set up which informs and educates them about new cultivation methods and tries to strengthen their role in the association. ASOANEI's cooperation with the farms helps the producers to have access to microcredits and to schooling for their children. They also own a bio-waste factory which converts bio-waste into organic fertiliser. It helps to keep the watercourses in areas clean and thus contributes to a local circular economy.
